There are a lot of misconceptions about how to optimally keep roasted coffee. An understanding of food science (chemistry & physics) shows the way: oxidation and loss of volatile flavor components is the enemy of the fresh roasted coffee taste we all savor. When you receive your coffee, put the beans in our original bag in the freezer. Roasted coffee should be kept air-tight and frozen to best preserve the flavors. Whole beans kept frozen and sealed will retain full flavor the longest. When you remove beans to brew fresh coffee, it is important to remove the beans quickly from the bag and to reseal it tightly. Put the bag back in the freezer immediately.
We recommend you grind your own. Whole beans retain flavors much longer than ground coffee. Buy your coffee as whole beans, and just before brewing grind what you need to make your pot of coffee.
