2 to 5% of the crop is produced as one round bean in a fruit rather than the usual two flat-sided beans in a fruit. These beans make a distinct more sophisticated coffee that is full flavored, but more complex with a precise, light, clean acidity.

Peaberry is a rare coffee bean that occurs in less than 5% of the picked cherries. Instead of containing two beans – each flat on one side, and round on the other – a peaberry contains just one round bean. Because in peaberries all the flavors are concentrated in single beans, it is thought they make a superior cup of coffee. Tom and Allan have found that a proportion of peaberry enriches the taste of XF and F grade brews.
